This salad tastes like in a fancy restaurant, therefore you make it easily at home. It can be an appetizer, lunch or dinner.
You know I like my vinaigrettes like the Lemon Vinaigrette and this one is no exception.
What you need for this Spinach Salad Recipe
Lettuce: I use romaine lettuce, but iceberg is also great.
Pomegranate molasses goes into the vinaigrette and is there to sweeten things up. Adds an amazing tang. If you can’t find it, you can simply use sugar. Together with dried cranberries it created a wonderful sweet flavor and texture.
For the vinaigrette: olive oil, vinegar, mustard, garlic and chili flakes. Everything with the pomegranate molasses makes an unforgettable vinaigrette that is always so good.
Bacon bites are vegan, but of course if you do bacon feel free to use it.
I use dairy free feta, but you can use any feta that you want.
How to make Spinach Salad
Wash and clean your spinach
Clean your spinach properly and after that dry it. You can use paper towels, but keep in mind to dry the spinach gently otherwise it can loose its form and will be pressed together.
Make vinaigrette
In a bowl combine olive oil (reserve 2 Tbsp for frying bacon), pomegranate molasses, mustard, chili flakes, garlic, vinegar, and a pinch salt and pepper. Mix or shake until vinaigrette is formed and combined.
Assemble salad
Heat the reserved olive oil in a pan. When hot, fry the bacon for about 4 minutes. Set aside.
Combine spinach, apples, feta, bacon, pecans, cranberries. Mix with vinaigrette and serve on bowls or plates.
Leftovers of the Spinach Salad are great for 3 days.
Tips and tricks
Instead of the pecans, you can also use walnuts.
As I said above pomegranate molasse isn’t always easy to get, but online it is always available. You can use sugar instead of the pomegranate molasses and will have similar results, yet a bit different.
Depending on your bacon bites you will find them precooked or not. If precooked cook them in oil according the manufacturer’s instructions.

- 4 cups spinach
- 1/3 cup olive oil
- 5 oz vegan bacon
- 6 oz dairy free feta, cubed
- 1/2 cup cranberries
- 2 apples, cubed
- 3/4 cup pecans
- 2 tsp mustard
- 2 tbs vinegar
- 2 tsp pomegranate molasses
- 2 cloves garlic, pressed
- 1/2 tsp chili flakes
- salt, pepper to taste
Instructions
