Southern Potato Salad is creamy, tangy and perfect for any BBQ, lunch, dinner or potluck. Dill pickles add an amazing flavor. Wait for the potato salad dressing that covers everything, because once tried you know this is what seriously takes any potato salad recipe to a whole other level.

I tell you this old fashioned recipe has all the flavors you love and of course it wouldn’t be me if I did add my own spin to make this Southern Potato Salad recipe even more delicious.

Friends, let me make this clear it is amazing, but here are simple the reasons why you will really love this potato salad:

My spin is pickle juice. You won’t find this in any other recipe. Mostly you will find apple cider or white vinegar, but I find pickle juice from the jar is what it takes for the most amazing flavor. No other vinegar needed.
Also I add a bit of garlic and onion powder to make the flavors shine more.

What you need for this Southern Potato Salad recipe

As I said above pickle juice, garlic, and onion powder are amazing ingredients to make the final result so delicious.

Other ingredients you will need:

Potatoes, of course. You can use Yukon or red potatoes, because these are great for a good texture without falling apart. Keep in mind all waxy potatoes are great for salads.

Mayo and mustard. I use egg free mayo and yellow mustard.

Pickles: Yes, these add great texture and a wonderful tang in combination with the mentioned pickle juice, delicious.

Celery adds a great savory and robust flavor to our salad.

Scallions: surely you can use onions, but scallions are milder and add a great contrast and freshness.

How to make Southern Potato Salad

Cook potatoes

Peel, clean and wash your potatoes, chop them into large chunks.

Cook them in lightly salted water until done, but not mushy. They cold fall apart, if you overcook them. After done chop potatoes into desired size and I find bite size best.

Prepare dressing

In a bowl, combine pickle juice, pickles, mustard, mayo, garlic, onion powder.

Combine the salad

Add now potatoes, celery, scallions and a pinch salt of pepper.

Serve and enjoy.

Tips and tricks

Serve or refrigerate for later. You can do this for up to 24 hours in advance.

What to serve: Really the Southern Potato Salad tastes great with another southern recipes like Southern Mac and Cheese. If you plan a potluck or party, this it is. Also delicious with Popcorn Chicken, Fried Mushrooms, or Easy Fried Pickles.

For a super silky and creamy texture you can do the following: after your potatoes are done you can use a potato masher or press and use them to make all potatoes really creamy. Mix with other ingredients as written above.

Leftovers can be stored in the fridge for around 5 days.

For an amazing flavor at the end sprinkle some paprika on top, yummy.

Ingredients

  • 3 lbs potatoes
  • 1/4 cup yellow mustard
  • 5 pickles, chopped
  • 4 Tbs pickle juice
  • 11 oz egg free mayo
  • 1 stalk celery, diced
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 4 scallions, chopped
  • salt, pepper to taste

Instructions

Prepare the potatoes

  1. Peel, clean and wash potatoes. Chop them roughly into large chunks. Ingredients for making the Southern Potato Salad are collected on a wooden board.
  2. Cook them in lightly salted water until done. Do not overcook them.
  3. After draining, let the potatoes cool down and chop them into desired size. Bite sized in my gusto is great.

Notes

  • For a super screamy texture, do the following: After your potatoes are done, use a potato masher or press and mash or press until super creamy. Add other ingredients as written above.

  • For a bold and great flavor, sprinkle some paprika on top, really nice.
