How to make a vegan Romesco Sauce

What’s in this Romesco recipe

  • almond butter (so you don’t even need a strong blender or food processor)
  • roasted red pepper
  • garlic
  • vegetable broth
  • olive oil
  • tomato paste

Bread or vegetables are great for dipping this Romesco Sauce.

Also you can use optional:

  • garlic powder
  • sun dried tomatoes
  • smoked paprika

Basically you only need 6 simple ingredients for this Romesco dip, not counting salt and pepper.

Preparation for this Romesco Sauce

You won’t believe how easy is this, so let’s get going.

You will need a food processor but as I mentioned it doesn’t have to be a fancy machine. Combine almond butter, roasted red peppers, garlic, tomato paste, vegetable broth, olive oil, vegetable broth, and optional garlic powder, sun dried tomatoes and smoked paprika.

Finally add a pinch of salt and pepper and run the machine until everything is smooth and creamy.

Note: You can use a blender as well, if you don’t have a food processor in your household.

This makes such an amazing meal prep for easy dinners, lunches, and lunch box ideas. Can you imagine how fantastic it tastes on wraps, burgers, or as dipping sauce? So yummy, you need to try this.

Romesco sauce pasta: just cook your favorite pasta and give the romesco sauce over it and you have the most delicious pasta in no time.

Bread dip: just dig in with your favorite bread or sticks and you have an amazing party food in no time.

Roasted red pepper hummus: After you combine all the ingredients, add 15 oz can chickpeas (drained) and 1/3 cup of tahini to the food processor or blender.

Ingredients

  • 3 tbs almond butter
  • 4 cloves garlic
  • 2 tsp olive olive oil
  • 1/4 cup vegetable broth
  • 1 14 oz jar roasted red pepper
  • 2 tbs tomato paste
  • salt, pepper to taste

Optional add ons:

  • 2 tsp garlic powder
  • 1 cup sun dried tomatoes
  • 1 tsp smoked paprika

Instructions

  1. Combine almond butter, roasted red peppers, garlic, tomato paste, vegetable broth, olive oil, vegetable broth, and optional garlic powder, sun dried tomatoes and smoked paprika.
