What you need for this Pineapple Casserole recipe

You will need only 6 ingredients that you might already have in your cupboard.

Of course you need pineapples. I use canned pineapples, because these are widely available, cheap and such an easy and delicious ingredient. You can use either crushed, chopped or a mix. Also I reserve 1/4 pineapple juice from the can. Friends this taste just amazing and makes the final result juicier.

I use all purpose flour, but you can absolutely use what ever you want. It is a thickener for the pineapple filling that goes straight forward in the casserole.

Brown sugar: in many recipes you see a mixture from different types of sugars which is what you can absolutely do. I want to keep it really simple so I only use brown sugar which was after testing back and fourth the clear winner. I find it adds a tasty, remarkable and almost caramel flavor to this dish, so delicious.

Of course any casserole needs butter and this pineapple casserole is no exception. Dairy free butter adds a lot of richness, creaminess and of course makes the Pineapple Casserole when combined top notch.

Crackers: plain, salted crackers are best like Ritz crackers.

Vegan cheddar is such a great ingredient which balances the others so well. Also it adds a rich body and so much delicious cheesy flavor.

How to make Pineapple Casserole

Quick preparation steps

Preheat oven to 360F and butter a 8×11 inch casserole dish.

Making the topping

Melt your butter in the microwave or on the stove in a sauce pan. Mix cracker crumbs with melted butter and set aside.

Double view on a casserole dish with the base pineapple filling and a pan with the crushed crackers and butter.

Making the filling

In a large bowl combine pineapples, juice, flour, cheese and sugar.

Mix everything together until well combined. 

Finishing the casserole

Transfer the filling to the casserole dish and sprinkle with the topping. Bake for around 30 minutes.

This Pineapple Casserole is most delicious warm.

Tips and tricks

You can use leftovers for around 5 days. Just wrap with cling wrap around your casserole or put a lid on top.

Freezing is not recommend. This is definitely not a dish that is suitable for freezing.

Texture gets mushy and the flavors will be not as good as fresh.

  • 60 oz pineapple tidbits (drained)
  • 1/4 cup pineapple juice, reserved from the can
  • 1/4 cup brown sugar
  • 1/2 cup vegan butter, melted
  • 1/2 cup flour
  • 30 crackers, crushed
  • 3 cups vegan cheddar, shredded

Instructions

Notes

Do not freeze this casserole. Best served warm, but leftovers will be good in the fridge for around 5 days.

Any recommendations if I use fresh ripe pineapple?

Hi Stella! Use the same amount of pineapples as I do with canned and drained. You can use a little bit of pinapple juice if you have one in your fridge. Otherwise just skip them. Hope that helps and let me know what you think.
