For the sauce it really is all about the ingredients and I keep it really simple. Therefore you will love the sauce that is well balanced, complex and delicious. You will have the feeling that you eat in a wonderful restaurant.
There are two things that create in my gusto the most amazing result and flavor: Divide your sauce in half. Cook it up with the noodles, after you cooked up your vegetables. Cooking noodles with the sauce will let them caramelize which makes a pretty solid umami flavor.
At this point you have the other half of the sauce reserved and that is added straight to the vegetables with the noodles. And that, my friends, prevents your noodles from getting dry.
What you need for this Pad See Ew Recipe
Rice noodles: you can use any noodles that you like, but wider ones are most delicious and amazing. Wider rice noodles have a bigger surface and that makes them so delicious they take more sauce in less time.
As vegetable oil you can use canola, sunflower, avocado or peanut oil. Any neutral tasting oil is great here.
I use broccolini which is a hybrid of broccoli and Chinese broccoli. Otherwise you can simply use broccoli and cut it up into small florets.
The sauce is really simple and I use soy sauce, white vinegar, sugar (use white, brown sugar, or even agave, maple syrup or honey). All of the ingredients in the sauce make a wonderful and amazing umami flavor.
I used vegan chicken which is our added protein, but you can use whatever you want. Chicken, tofu, tempeh, seitan.
Chili flakes you probably wouldn’t expect in stir fry noodles, but let me tell you they adds hint of spiciness which takes Pad See Ew from great to I must make them again and again.
How to make Pad See Ew
In a bowl combine soy sauce, sugar, vinegar and garlic. Mix well and set aside.
Prepare rice noodles according the package directions. Usually all it takes is soaking them in hot water, but will depend on the used noodles.
Into a wok or pan add vegetable oil wait until hot add broccolini and chicken and cook both for around 4 minutes until everything is softened.
Into the same wok, add noodles and half of the sauce. Stir everything together and caramelize them for around 30 seconds.
Now whisk in the remaining sauce and cook for 2 minutes more. Season with a pinch of salt and pepper.
Serve on plates or in bowls and enjoy.
Tips and tricks
Leftovers are great for 4 days.
For freezing, let cool completely and transfer to freezer bags or containers. Stays good in the freezer for around 3 months.
You can stir in more vegetables if you want to: bell peppers, peas, zucchinis to give you some inspirations.

- 4 oz rice noodles
- 1 cup broccoli
- 2 Tbs vegetable oil
- 6 oz vegan beef
- 1 tsp sugar
- 1/3 cup soy sauce
- 2 Tbs white vinegar
- 4 cloves garlic, pressed
- 1/2 tsp Chili flakes
- salt, pepper to taste
Instructions
- In a bowl add and mix soy sauce, sugar, vinegar and garlic.

- In a wok or pan that is big enough, add vegetable oil. Wait until hot, then add broccolini and chicken. Cook them for around 4 minutes.
- Into the same wok, add noodles and half of the sauce. Stir them together and caramelize them for around 30 seconds.
- Finally, stir in remaining sauce and cook for 2 minutes more. Finishing with a pinch of salt and pepper.
