Holiday season is around us. This is the time of the year that we want to snuggle into our favorite blanket, with a cup of hot tea or coffee and an amazing dessert indulgence.

Full of fall and winter flavors like my  Cheesecake Brownies with Caramel Apples or simply stunning like my Chunky Monkey Banana Cream Pie.

This new Oreo Brownie Bottom Funfetti Cake is seriously amazing. Oh gosh, I’m not lying. It’s one incredible combination and so damn sexy good.

You might think this guy overacts. Trust me, I do not.

If you try these you will know what I’m talking about. Be sure these are addictive, colorful, creamy, satisfying, drool-worthy, addictive, a must make, impressive, packed with incredible flavors, mouthwatering and no one would ever guess they are dairy free and plant based.

The idea for these babies occurred only recently in my mind. Of course Oreos are vegan, so this isn’t a thing for one, but the challenge was when one gluten free friend ask me, if I can handle it to make a gluten free cake recipe.

What is a Funfetti Cake?

I bet you all have seen a Funfetti Cake before. Probably you eat this each year on your birthday and of course it’s a childhood memory for many.

Who does not remember these days?

When this cake was waiting on your table covered with some rainbow sprinkles. Yes those were the days when we all ate one or two pieces with our family and friends.

It’s a timeless and remarkable combo for sure. I would say if you don’t know what cake to bring, you can’t go wrong with this Oreo Brownie Bottom Funfetti Cake.

It’s a fantastic and satisfying dessert to end every dinner or lunch or for a glorious coffee break.

I made this recently after it turned out so great for a potluck and everyone loved this so much. Even the pickiest kids or meat lovers could’t guess it’s a vegan cake.

No one could ever believe it, but it’s real and there is no magic. Just plain delicious.

I know Oreos are not the healthiest thing in the world, but that’s not the point today. From time time one love to indulge yourself.

The challenge was to find gluten free oreo style cookies. Believe me that wasn’t easy. I found these at a local store and online. But it can be a bit tricky, of course, regular Oreos will do the trick  as well.

How to make a gluten free cake?

Some recipes for gluten free desserts call for a mix of 5 different flours. Insane! I keep it really easy. You only need one flour, mix it with maple syrup, almond milk, and vanilla as you see in this easy cake recipe.

For this one, add the plain oreo style cookies (with the cream filling removed and reserved) to all the other ingredients in one single bowl.

Mix it, transfer to a baking dish, and bake the brownie bottom for 25 minutes at 390°F.

One note at this point: please don’t use only almond or coconut flour, it will not work for the taste and texture. If you use one of those, use only 1/4 cup not more than that.

And mix it with a neutral other flour like buckwheat or teff. So when you do this you definitely need a gluten free cake mix from 2 flours.

How to make a dairy free frosting from scratch for the Oreo Brownie Bottom Funfetti Cake?

Think about your whipped cream frosting. Often it is made from butter, cream cheese, and heavy cream. Or maybe you mix it with a marshmallow fluff. But to make a dairy free frosting from plant based ingredients is even easier. It’s so easy, let’s do this together!

Scrape out the coconut cream from 3 chilled coconut cans. Use chilled milk, you really want the cream! Use the liquid for other things like soups, dips and more.

Next mix with with the reserved cookie cream. This way I find no need for an additional sweetener. I tested it and found out it was perfectly sweet enough.

But feel free to make it even sweeter, if needed. Add vegan cream cheese and mix with a handmixer until all is fluffy and creamy. Mix with agar agar for thickening.

How much you will need depends on the product. For example if you use flakes or powder, so make sure to read the directions properly.

Put the filling on the cooled brownie bottom and sprinkle with some vegan funfetti sprinkles.

You will having a hard time not to eat the whole cake. But on the other hand it’s so filling, so there is no need to eat many pieces.

Ingredients

  • 1 batch dough from the Vegan Buckeye Brownies (make the dough, not filling)
  • 10 Oreo style gluten free cookies
  • 3  14 oz cans coconut milk, chilled
  • 8 oz vegan cream cheese
  • 1/3 cup vegan funfetti sprinkles
  • agar agar

Instructions
