Obviously, such a version is not diary free or plant based. And we need another option without these ingredients, but with all the taste.

How to make One Pot Taco Pasta

It couldn’t be any easier as with my recipe, guys. Have fun and enjoy!

We start with heating a bit of oil (or vegetable broth for oil-free cooking) and fry the garlic and optional onions and bell pepper for around 4 minutes.

Now it is time to add beans, corn, taco seasoning, optional chili powder, cooked pasta, and salsa. Season with salt and pepper and cook for 7 minutes more.

And you are done. Divide onto plates or bowls and enjoy.

This makes an fantastic and incredibly easy dinner, lunch or work dish for everyone.

I ate this 4 times as I mentioned before. I served it to friends as well and everyone loved this. No one missed the meat or cheese.

This is one dish you can serve everyone, no matter plant based or not.

Also it’s a great start if you wanna involve more veggies in your dinner rotation and cut out a bit of meat. Because it’s super easy and you don’t need any advanced cooking skills.

Note: If you sensitive to heat, don’t use the optional chili powder or scale down. I would say start with 1/2 tsp and adjust from there.

You can use any taco seasoning from your favorite store or try my homemade version.

Then you know precisely what goes in taco seasoning. How to make taco seasoning is no secret. Just combine cumin, chili powder, and paprika spice mix and you are ready.

How to make Salsa

I used a store bought salsa from a local store which was made without any preservatives, but you can also use your favorite homemade recipe.

Making Salsa is super easy. You need some fresh tomatoes, chop them and add a bit minced garlic and onion. Freshly squeezed lemon or lime juice does the trick. Combine everything in a bowl.

For a a it more hotness add a jalapeño, or chili.

Put the salsa in a bowl garnish with cilantro.

This One Pot Taco Pasta is naturally vegan, gluten free. With salsa and black beans, plus many optional additions, it is a protein rich lunch or dinner, packed with mouthwatering flavors and a winning combination for everyone.

Ingredients

  • 5 cups cooked pasta (I used gluten free)
  • 3 cups salsa
  • 6 cloves garlic, minced
  • 2 tbs taco seasoning (try my version from the Vegetarian Fajita Pasta)
  • 1 15 oz can black beans, drained
  • 1 cup corn
  • salt, pepper to taste

Optional additions:

  • 1/2 cup chopped onions
  • 1 cup chopped bell pepper
  • 4 tsp chili powder

Instructions

  1. Heat a bit of oil (or vegetable broth for oil-free cooking) in a pot and fry the garlic and optional onions and bell pepper for around 4 minutes.
