I think it’s time to start, so cook the quinoa according the manufacturer’s directions.
While the quinoa is cooking, prepare the Mexican Cheese Dip according the directions. Pro tip: if you want to save time, just prepare this the night before.
Last and next: Chop the tomatoes, mix with quinoa. Follow with draining the pinto beans and add them to the tomato-quinoa mix.
Pour a good amount of Mexican Cheese Dip over it, season with salt and pepper, and garnish with cilantro. The cilantro is optional but I highly recommend it. You are done!

Enjoy this new Mexican Fiesta Quinoa Salad. It’s made with just 5 ingredients and done in 2 easy steps. With pinto beans, tomatoes, and onions, this vegan and gluten free salad is an amazing and delicious Mexican delight.
Ingredients
- 14 oz can pinto beans drained
- Mexican Cheese Dip
- 1 cup quinoa, uncooked
- 6 oz cherry tomatoes, cut into halves
- 1/3 cup onions, chopped
- salt, pepper to taste
- cilantro for garnish (optional)
Instructions
- Cook the quinoa according the manufacturer’s directions. While the quinoa is cooking, prepare the Mexican Cheese Dip according the directions.
- Chop the tomatoes, mix with quinoa. Follow with draining the pinto beans and add them to the tomato-quinoa mix. Pour a good amount of Mexican Cheese Dip over it, season with salt and pepper, and garnish with cilantro.
