In pre-vegan days (read here what’s happened in About Contentedness Cooking) there was a thing I was totally in love with: Meatball Subs.

Yes, I could eat these often. Slider buns with meatballs, a bit of marinara, and cheddar or mozzarella cheese.

Done. I often ran to fast food places and ordered my favorite subs.

Now that I’m vegan, it had been a long, long time since my last meatball sub. Because of that, I felt like it was high time to find a solution to enjoy a vegan version of my beloved comfort food.

I invited some friends for dinner at my place, recently. And of course, I took the opportunity to make this recipe.

Start by making a batch of my White Bean Meatballs Italian Style. Next step is preparing the vegan cheese that I recently used in my Vegan Cheese Quesadillas.

It’s made from corn and super versatile. And if you are in the mood for more cheesy decadence, make my Cashew Parmesan.

Assembling your Sub is the easiest thing ever. Slather some marinara on your slider bun, next come meatballs, followed by vegan cheese and, if using, parmesan. Ready and done.

These are just adorable Florian! The pics look incredible and I'm starving right now and would easily stuff myself silly with 5 of these. That bread looks so pillowy soft too. What a delicious recipe. I love "meatball" subs and the fact they are plant-based means people can still enjoy that classic taste without the cruely. Such a wonderful recipe and now I'm craving some "meatball" sandwiches. Great recipe Florian! And yes, bring on the healthy plant protein!
