What’s in this potato salad dressing

No worries, it is super easy. Just 2 simple ingredients (and no mayo):

  • Olive oil
  • Apple cider vinegar

Right, it couldn’t be any easier. Combine, shake in a jar. Whatever you like, done.

What you need for this mayo free potato salad

  • Potatoes
  • Olive oil
  • Vinegar
  • Garlic
  • Scallions
  • Jalapenos

Optional add:

  • Radishes
  • Bell pepper
  • Smoked tofu
  • Chilis
  • Arugula

How to make Hot Potato Salad

First clean your potatoes and peel them. Cut roughly into about half inch size cubes. Place in a pot with enough water, add a pinch of salt and bring to boil.

How long to boil potatoes

It will usually depend on your used potato size if you do not cut them and may vary from 15 up 20 minutes. When cut into the cubes, it is much shorter, about 10 minutes. For this recipe, I suggest you just try a piece and taste if it is done.

Another great way that you can try is to steam potatoes. Place potatoes in the steamer attachment from your microwave with a little bit of water or use the steamer basket on the stove. It shouldn’t take any longer than 30 minutes for uncut potatoes.

A hot potato salad is a perfect family lunch or dinner.

Step-by-step instructions

Going further with the Hot Potato Salad: while the potatoes are cooking, heat a skillet with 1/8 cup olive oil, which is precisely 2 Tbs from the total needed 1/2 cup olive oil.

Add jalapenos, scallions, minced garlic, optional smoked tofu and fry all for 4 minutes. Now add more optional add ons like radishes, bell pepper, chilis and fry for another 3 minutes.

Mix remaining oil and vinegar in a bowl big enough for the salad. This has the advantage that you do not need any extra bowls. Transfer the potatoes to that bowl, and add all the other ingredients from the pan. Season with a pinch of salt and pepper, mix well. Serve with the optional arugula, divide into bowl or onto plates and enjoy warm.

Note: make sure to add to add the optional arugula just at the end, otherwise it will get mushy.

The same is true if you plan to have this for meal prep. You can eat the salad hot, so just warm it on the stove or microwave. It will also taste delicious even cold, but always add arugula fresh, not in advance.

Variations:

Red and blue potato salad: use red and blue potatoes for more variation. Not only it is great for variation, it will make your salad pop.

Ranch potato salad: replace half of the oil with vegan mayo, add some dried herbs, such as parsley, chives, and dill to it. Done. You can also use fresh herbs, but make sure to add them at the end.

  • 1/2 cup olive oil divided
  • 1/4 apple cider vinegar
  • 3 cloves garlic, minced
  • 1 small bunch scallions, chopped
  • 1/3 cup jalapenos, chopped
  • salt, pepper to taste

Optional add ons:

  • 5 radishes
  • 1/2 cup bell pepper
  • 8 oz smoked tofu
  • 2 chili finely
  • arugula
