What you need for this Fried Zucchini recipe
Zucchinis are the star of the show and the main ingredient. Really delicious, well seasoned and done right.
I use all purpose flour and it makes a great texture, but we also use panko breadcrumbs for that crispy and amazing crunch.
Seasonings: these are important for a great flavor. No time for bland seasonings, so of course I add dried oregano, dried parsley, garlic and onion powder.
Oat milk: this my milk of that I use, because it tastes so much like the real milk. Yet, use what you have on hand soy, almond or any other milk.
Oil: use a high temperature oil like canola, sunflower or peanut oil that you can use on high temperatures which will be ideal for frying.
How to make Fried Zucchini
Prepare the coating
Take a small bowl and add your flour, as well as seasonings like smoked paprika, oregano, parsley, chili flakes and seriously a good amount of salt and pepper.
Cut zucchinis
Wash zucchinis, clean them and cut them into 1/4 inch rounds.
Bread zucchinis
Dig zucchinis into milk, then into flour, back into the milk and finally breadcrumbs. After testing I find this is the best way, because you have a good amount of the breading that sticks to your zucchini rounds.
Fry zucchinis
Use a pan that is large enough. Make sure the oil is hot (350F), if in doubt use a kitchen thermometer.
Fry zucchinis from both sides, until they are golden browned. This will take about 2 minutes from each side.
Transfer zucchinis on paper towel to carefully remove any excess oil.

To make this, I mix some dairy free yoghurt with chives, dill, parsley, garlic, olive oil and a pinch salt of pepper.
Leftovers are great for 4 days in the fridge and you can reheat them in the oven or microwave to enjoy them later.
Tips and tricks
Not everyone is into frying, I’m totally in, because I love fried things with that crispy texture.
You can alternatively bake everything. To do that, preheat oven to 410F and bake zucchini for around 20 minutes.
In the air fryer: preheat air fryer to 380F. Place zucchinis into a single layer and fry them for 8 minutes.
