Easy Veggie Pasta Recipe – Under 20 Minutes!

Creamy pasta sauce

The key to a plate full of delicious pasta is making the sauce. When you are on the lookout for veggie pasta sauce recipes, you will see that many often add heavy cream, or cream cheese to get a creamy pasta sauce.

And I do that myself often in my recipes, like in this Creamy Mac and Cheese.

However, this veggie pasta recipe is truly different, because I use tahini to make creamy sauce. The result is rich, savory, amazing and I would probably eat that almost any day of the week.

Reasons to make this Veggie Pasta

It is a really easy vegetarian pasta recipe that relies only on pantry staples.

You can’t imagine that this simple combination taste so great, so you just have to try!

Never would you expect that tahini paste makes such an amazing, creamy sauce.

What you need for this Veggie Pasta recipe

The recipe works with whatever pasta you like: fusilli, linguini, spaghetti, bowtie, you name it.

Olive oil is used for frying the vegetables, starting with onions and garlic for a classic, savory and delicious flavor.

As a basic ingredient for the sauce, we use tomato sauce like in the Spaghetti Sauce recipe.

To make the sauce perfectly delicious, use oregano and chili flakes for a little bit of heat. And add tahini for a lot of creaminess and richness. So amazing, savory and seriously delicious.

What vegetables can you add to pasta

Generally you can let your imagination go wild, there is in my gusto hardly any vegetable that does not work well with pasta.

For this Veggie Pasta, I go with my favorite combination of mushrooms, zucchinis, and olives. I recommend Kalamata or black olives for a great flavor and texture.

How to make Veggie Pasta

Let’s get started with getting this veggie pasta dish on the table in under 20 minutes! Here are my step by step instructions:

First step is cooking the pasta. Bring water in a large pot to a boil, and cook the pasta according to the package directions. When it is done, drain the pasta and set aside.

While the pasta is cooking, get to the vegetables. Wash and cube them. Heat oil in a pan, add onions and garlic, mushrooms and zucchinis and cook for 10 minutes until soft.

Stir in the tomato sauce, season with chili flakes, oregano, and a pinch of salt and pepper. After 2 minutes, mix in the tahini with a spatula until the sauce is smooth and creamy.

Finally, mix pasta with olives and the vegetable sauce, serve and enjoy.

How to store leftovers

If you have any leftovers, you can enjoy them for 5 days. Just keep them in a stored container in the fridge.

Variations

My personal recommendation: try this pasta with veggies cold as a veggie pasta salad. So yum!

Or try making an easy veggie pasta bake by transferring everything to a casserole dish, cover with your favorite cheese and in the oven it goes!

  • 22 oz tomato sauce
  • 2 Tbs olive oil
  • 1/2 cup onions, diced
  • 4 cloves garlic, pressed
  • 1 cup mushrooms, sliced
  • 3/4 cup zucchini, diced
