This Dorito Casserole is made with Tortilla chips which are layered with vegan chicken cubes, onions, garlic, jalapenos all covered in a flavorful taco sauce that is beautifully cooked in one pot. Baked to perfection, you can be sure it will become a family favorite with an amazing crunchy topping that you will always want to come back to.

Why you want to make this Dorito Casserole
Plainly, it is flavorful and so delicious, yum.
The creamy sauce is made with vegan sour cream, cream cheese as a rich base. Jalapeños and red pepper flakes then create an even better flavor.
Tortilla chips make a great topping as well as a crunchy texture.
The taste of the Dorito Casserole is great. Because everything is layered you get a bit of everything.

What you need for this Dorito Casserole recipe
- Tortilla chips
- Canned jalapeños
- Onions
- Garlic
- Red pepper flakes
- Olive oil
- Vegan sour cream and cream cheese
- Vegan chicken bites
- Green onions
- Vegan cheddar
For the topping after baking I added green onions, because they add an amazing fresh sharpness to the casserole.
How to make Dorito Casserole
Preheat oven to 400°F, grease a 8×11 inch casserole dish with a bit olive oil and set it aside.
Heat olive oil in a small skillet and add finely diced onion, garlic, and chicken. Fry for around 4 minutes.
Next add canned jalapenos, red pepper flakes, sour cream and cream cheese. Season with a pinch of salt and pepper.
Start assembling the Dorito Casserole by adding half of the crushed tortilla chips to the bottom. Add now the chicken mix, sprinkle with half of the cheddar. Give the remaining chips on top and finishing with the rest of the cheese.
Bake for around 15 minutes until cheese is melted, finally top with green onions and serve on plates.
Can I freeze this Baked Casserole?
You can, but I don’t recommend it. The reason is that the tortilla chips tend to get mushy. You can imagine that will have an impact on the flavor and texture.
Instead stick leftovers of the Dorito Casserole in the fridge for around 4 days.
Tips and tricks
Any flavor will work for the chips, but my favorite is chili and I find it is best.
Crush your chips roughly. Make sure it is not too fine you really want a texture. You can use a freezer bag for that.

- 8 oz tortilla chips, crushed (use gf, if needed)
- 1/4 cup canned jalapenos, roughly chopped
- 1 tsp red pepper flakes
- 12 oz vegan chicken bites
- 2 Tbsp olive oil
- 4 cloves garlic, minced
- 1/3 cup onions, chopped
- 7 oz vegan Sour cream
- 7 oz vegan Cream cheese
- 1.5 cups vegan Cheddar, shredded
- 1 small bunch green onions, finely chopped
- salt, pepper to taste
