Coating for chicken
You can use flour, cornstarch, breadcrumbs, all of them are great.
However, I find another ingredient for coating chicken that’s a hit: French fried onions.
For sure an ingredient that you wouldn’t expect, but let me tell French fried onions make everything so flavorful in each and every bite. You will get a crispy, flavorful amazing result, so good.

What you need for this Crispy Chicken recipe
Chicken: I use vegan and have 4 filets, but you can absolutely use what you love and want. It will work with any chicken.
French fried onions: I’m lazy and use some from the store, but if you have the time make them fresh, check out French Fried Onions. Keep in mind for homemade to also crumble them enough to get a smaller texture.
Seasonings: garlic, onion powder, smoked paprika make truly a wonderful seasoning for each and any bite.
Egg free mayo will make our chicken so juicy and delicious.
Mustard gives everything another layering of flavor.
How to make Crispy Chicken
Preheat oven to 410F and set a casserole dish aside or prepare a baking sheet with parchment paper.
You will need 2 bowls: one for the marinade and the second one for the coating
Prepare marinade
In a bowl combine mayo, mustard, smoked parika, onion, garlic powder and a pinch salt of pepper. Set aside.
Grab a second bowl and add French fried onions to it.
Coat chicken
Dip chicken into the marinade, make sure it is entirely covered with it. Further dip chicken in Fried onions it should be entirely covered with onions. Place in the casserole or on prepared baking sheet.
Bake chicken
Bake for around 20 minutes. Keep in mind that bigger filets would need more baking time. I can only vouch for precise results by the exactly portion size. Serve and enjoy.
Leftovers are great for 3 days. You can reheat them in the oven or microwave which will lead to not as crispy result, yet still enjoyable.
Quick dinner idea
As you can see in my step step pictures, I chop my Crispy Chicken after baking in strips.
Mix them further with a bag of lettuce and add a bit of dressing like this Ranch Dressing or Thousand Island Dressing. Any dressing will work perfectly so use whatever you have on hand.
This is a great quick dinner idea which is delicious and you can make Crispy Chicken 2 days in advance. For an amazing dinner or lunch the whole week.

- 14 oz vegan chicken (4 filets)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- 1 tsp mustard
- 2 cups French fried onions, crushed
- 1 cup egg free mayo
- salt, pepper to taste
Instructions
- Heat up oven to 410F and get a casserole dish ready or prepare a baking sheet with parchment paper. Set aside 2 bowls: one for the marinade and second for the coating.
- Make marinade:
To a bowl combine mayo, mustard, smoked parika, onion, garlic powder and a pinch salt of pepper. Set aside. - Grab a second bowl and add French fried onions in them.
- To coati the chicken, dip it first into the marinade until it is entirely covered. Now, dip chicken in Fried onions.
- Place the covered chicken filets into the casserole dish or on prepared baking sheet.
- Bake chicken for 20 minutes, serve.
