What you need to make this mushroom pasta
- mushrooms
- vegan butter + olive oil
- garlic
- vegan Parmesan
- fresh parsley
- oat cuisine
- white wine
- pasta
How to make Creamy Mushroom Pasta
First heat a pot with water, add a pinch of salt. When the water is boiling, add your pasta and cook it according the manufacturer’s directions.
While the pasta is cooking, heat a skillet or casserole. Add vegan butter and olive oil. When hot, add garlic and mushrooms and fry them for around 2 minutes.
Mix in oat cuisine, white wine, and vegan Parmesan. Season with salt and pepper and cook everything for 5 minutes. Finally mix and add fresh parsley.
Combine with cooked and drained pasta and serve on plates or bowls and enjoy.
It is such an amazing meal for dinner, lunch, or meal prep that you want always have on hand.
Finally here are some more tips and tricks to make it even more easier:
If you can’t find oat cuisine which is best, you can try almond, coconut or any other plant milk.
You might want to add a bit of starch or flour to thicken up the sauce.
Best pasta: feel free to absolutely use any pasta you like. But for me long pasta are made for this sauce, because the surface can hold the sauce best.
Best mushrooms: I used a good amount of mushrooms for my sauce and find it just right, because mushrooms will shrink when cooking in the sauce a lot.
If you are using less, it will not have a good amount of mushrooms which for me I absolutely want for the taste and texture.

- 7 oz pasta (use gf, if needed)
- 3 Tbs vegan butter
- 1 cup white wine
- 2 Tbs olive oil
- 1 lb mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup oat cuisine
- 1/3 cup parsley, finely chopped
- 1 batch Vegan Parmesan Cheese (3 ingredients, 1 min)
- salt, pepper to taste
