Garlic and dill: I think is a great flavor combo, because it really adds so much flavor.

Cumbers and onions: for a great texture and crunch.

What you need for this Creamy Cucumber Salad recipe

  • Cucumbers
  • Onions
  • Vegan mayo

 

  • Vinegar
  • Vegan sour cream
  • Garlic
  • Dill

How to make Creamy Cucumber Salad

Slice the cucumbers really thinly. I used a food processor to get the result you see on my step by step pictures above. Alternatively, slice with a sharp knife. Peel the cucumber, if you prefer this.

Give all the dressing ingredients into a bowl and combine well. Add the cucumbers, onions, and dill and toss everything.

You can enjoy this Cucumber Salad immediately or chill it for 1 or 2 hours in the fridge. Leftovers will stay fresh for 3 days in an airtight container.

Ingredients

  • 2 large cucumbers
  • 4 Tbsp vegan mayo
  • 1/3 cup fresh dill, chopped
  • 1 Tbsp vinegar
  • 1 clove garlic, pressed
  • 1/2 cup onions, sliced
  • 8 oz vegan sour cream
  • salt, pepper to taste

Instructions
