What you need for this Cowboy Butter recipe
Butter: I use dairy free butter, but use any butter that you like. Unsalted butter in my gusto is best, because I like to control the added salt amount myself. Salted butter is of course delicious, however it can be from time to time intensely salty.
Lemon juice + zest: Both of them add tang to our butter. Keep in mind if using a fresh lemon for the zest to peel them first, before juicing the lemon. The other way it can be more tricky to peel the lemon after juicing.
Mustard: this is another ingredient that adds up flavor and even more tang.
Chives, parsley and garlic: these herbs are delicious mixed with butter. It is a combination that is commonly used in herb butter and of course with lots of garlic. Who doesn’t love that?
Scallions are milder than regular onions and of course add a wonderful texture. You can also use shallots if you want to.
Paprika and chili flakes: paprika powder adds another layering of flavor, while chili flakes are here to give the final result a little bit of heat.
How to make Cowboy Butter
In a small sauce pan slowly melt butter over low heat.
Then, add in mustard, scallions, garlic, parsley, chives, lemon juice, zest, paprika, chili flakes. Finally a pinch salt and pepper.You will get a cowboy butter sauce. That is wonderful and great to dipping, serving and so much more.
Note that any leftovers will harden up in the fridge. To soften it again, you can easily give the Cowboy Butter for a short time into the microwave or take it out of the fridge for 30 minutes before using.
Compound butter log or cylinder
If you want the Cowboy Butter firm, you can straightforwardly use a piece of plastic wrap or parchment on a clean surface. Add the herb butter just roll and shape a log or cylinder. Secure the ends of parchment paper or plastic wrap.
Transfer to the refrigerator and place the wrapped butter log for around 1 up 2 hours that it can be easily firm up. After that unwrap and slice into rounds or any preferred shape.

- 2 Tbs lemon juice
- 1 lemon zest
- 4 cloves garlic
- 1 small bunch chives, chopped
- 2 small bunch parsley, chopped
- 5 scallions, chopped
- 1 tsp chili flakes
- 2 tsp mustard
- 1 tsp paprika
- salt, pepper to taste
