Corn Salad

This easy Corn Salad is made with tomatoes, onions, garlic, avocado and of course corn. What makes it so amazing is the addition of vegan bacon bites. Everything is covered in a simple dressing and will come together in 15 minutes. A family favorite the whole year, not only in spring or summer.

The Corn Salad comes with an easy to make dressing: red vinegar, olive oil and fresh garlic in my opinion is all it needs to make a great easy dressing that is bursting with flavor.

Vegan bacon bits not only brings a smoky flavor, but also adds a crunchy texture.

Avocado, do I need say more? The creamy and rich texture makes everything better, friends.

Here is what you need for my Corn Salad recipe

  • Corn
  • Olive oil
  • Vegan bacon
  • Tomatoes
  • Garlic

 

  • Onions
  • Chilis
  • Avocado
  • Bell pepper
  • Parsley

Vegan bacon bits are fried in a small frying pan.

How to make Corn Salad

For the dressing:

Combine 3 Tbsp olive oil with red vinegar and press garlic cloves. Mix until combine.

For the salad:

Heat 2 Tbsp of olive oil in a skillet. Add vegan bacon and cook for 3 minutes set a side.

In a bowl, combine corn, cherry tomatoes, onions, chilis, avocado, bell pepper, parsley and vegan bacon.

Finally mix with the dressing, serve on plates or bowls.

Fried bacon bits and the salad dressing are given to the bowl.

How long does Corn Salad last in fridge?

Leftovers can be stored in the fridge for around 5 days.

Fresh parsley is added to the salad and everything is mixed.

Tips and tricks:

For the corn, use whatever you have on hand fresh, frozen or canned.

Use cilantro instead of parsley

If you have time you can grill the corn, but there is absolutely no need, because it tastes great as it is.

For the salad:

  • 4 cups corn, fresh, frozen or canned
  • 1 cup cherry tomatoes
  • 1/2 cup red onions
  • 6 oz vegan bacon bites
  • 1 Tbsp olive oil
  • 1/3 cup parsley
  • 2 mild chilis
  • 1/2 cup bell pepper
  • 2 avocados

For the dressing:

  • 2 cloves garlic, pressed
  • 1/4 cup olive oil
  • 1/4 cup red vinegar
  • salt, pepper to taste

Instructions
