Chopped Salad ingredients
We start with red onions for this chopped salad recipe, because they are vibrant but milder than white or yellow onions.
Lettuce: I use romaine and iceberg, but of course feel free to use anything else that you like.
Tomatoes, cucumbers, chickpeas are essentials for a salad. Same reason I have added them also into other easy salads like my Couscous Salad, the Cobb Salad, or Chickpea Salad.
Bell Pepper: I like to use an orange and a red bell pepper simply to add more vibrant colors to our salad.
Avocados add creaminess and richness.
I also use green olives, but black olives will be amazing as well.
Here comes the ingredient what sets my Chopped Salad recipe apart from others: pumpkin seeds add are great nuttiness as well as a bit of crunch.
Easy vinaigrette ingredients
Just wait until you smell and taste the vinaigrette I use for this Chopped Salad. You will agree is the best vinaigrette, because its flavors are spot on. It is so delicious, you can use it for many other salad recipes.
You will need:
Olive oil, red vinegar, lemon juice: these components will make everything fresh and juicy at the same time.
The flavor from shallots in the vinaigrette and red onions in the salad creates a really great combination which is not too strong, but flavorful in a good way. Garlic adds another layer of flavor and is the one ingredient which is always great.
Smoked paprika, dried parsley, oregano, chili flakes and sugar are all seasonings which add taste and a complex flavor you know from eating in an amazing restaurant. Just this one is easily doable at home.
Sun dried tomatoes: I chopped some sun dried tomatoes and this makes this vinaigrette even brighter and more yummy.
How to make Chopped Salad
Make vinaigrette
Into a bowl or salad jar combine or mix oil, vinegar, lemon juice, pressed garlic, finely chopped shallots, dried oregano, parsley, smoked paprika, chili flakes, sugar, sun dried tomatoes.
Finally season with salt plus pepper to taste.
Assemble salad
Start with chopping the salad ingredients.
Then, given the lettuce to a large mixing bowl, followed by avocados, chickpeas, tomatoes, bell peppers, red onions, olives, cucumbers, and pumpkin seeds.
Add the prepared vinaigrette, combine well and serve.
Leftovers can be use for 3 days in the fridge covered, vinaigrette will last for 1 week.

For the Chopped Salad:
- 4 cups head lettuce, chopped
- 1 avocado, chopped
- 15 oz chickpeas, drained
- 1/2 cucumber, finely chopped
- 1/4 cup red onion, finely chopped
- 3/4 cup green olives, pitted and chopped
- 1 bell pepper, red, chopped
- 1 bell pepper, orange, chopped
- 1 medium tomato, chopped
- 1/4 cup pumpkin seeds
For the vinaigrette:
- 2 cloves garlic, pressed
- 1/3 cup olive oil
- 2 Tbs red vinegar
- 1 Tbs shallots, finely chopped
- 2 Tbs sun dried tomatoes, chopped
- 1/2 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp dried parsley
- 1/2 lemon, juiced
- 1/4 tsp chili flakes
- 1 tsp sugar
- salt, pepper to taste
Instructions
Prep vinaigrette
- In a small bowl or jar, mix olive oil, vinegar, lemon juice, garlic, shallots, dried oregano, parsley, smoked paprika, chili flakes, sugar, sun dried tomatoes.
- Add a pinch of salt and pepper.
Make Chopped Salad
- Grab a large mixing bowl and add lettuce along with avocados, chickpeas, tomatoes, bell peppers, onions, olives, cucumbers, and pumpkin seeds.
- Pour the vinaigrette over the salad and mix well.
Notes
The salad will be great for 3 days in the fridge (best is to only mix with the vingaigrette shortly before eating). The vinaigrette itself you can store it for at least 1 week.
