Reasons to love this Chicken Stir Fry
It is a great foundation to sneak more vegetables into your foods, like green beans, mushrooms, carrots and anything what you can think of.
I use plant based chicken which is a wonderful and delicious protein in our stir fry, but feel free to use what you like. If you do chicken use that, or prepare with tofu, tempeh or seitan.
The sauce in this Chicken Stir Fry is really easy. No cornstarch is required, because I want to have the maximum flavor with really little effort. Also of course absolutely delicious with my Stir Fry Sauce.
What you need for this Chicken Stir Fry recipe
All are pantry staples and nothing is complicated here.
Vegan Chicken is our protein as I mentioned above. You can easily use what you have on hand. It makes a wonderful meaty and tender texture that is really good in a stir fry.
What oil to use is a question of personal taste. Sesame, canola, olive oil or any other neutral tasting oil is great.
Broccoli: this our second ingredient that provides another amazing texture.
Bell peppers: I like to use red bell peppers, but any is great: yellow or green.
Garlic and onions are basic ingredients and seriously it doesn’t get any better and more tasty than these.
Ginger adds a lot of flavor and I peel and grate mine so the flavor comes out and shines through the Chicken Stir Fry.
For the sauce I use soy sauce, sugar, and crushed pepper flakes. Soy sauce gives a great umami flavor. Sugar you can use white, brown sugar which add a hint of sweet flavor inn contrast to the other ingredients. Also you can use, maple syrup, agave or even honey. Finally I finish the sauce with a sprinkle of crushed red pepper flakes for a little bit of a heat.
How to make Chicken Stir Fry
In a small bowl combine soy sauce and sugar. Set aside.
In a skillet, heat 1 Tbs of oil. When hot, add chicken to the skillet and cook for around 2 minutes, then remove from the pan.
Next add reserved 2 Tbs oil to the pan. Heat and then add onions, bell peppers and broccoli, cook for 4 minutes more.
Add chicken back to the pan along with garlic, ginger, the prepared sauce, and crushed red pepper. Let simmer for 4 minutes more.
Finally, season with a pinch salt and pepper. Serve the Chicken Stir Fry and enjoy.
Tips and tricks
Leftovers are great for around 4 days.
You can top your stir fry with cashews, sesame or peanuts on top like in the pictures.
Also you can serve with rice or noodles.

Ingredients
- 12 oz vegan chicken
- 3 Tbs oil, divided
- 1 cup broccoli, chopped
- 1/2 cup bell pepper, sliced
- 3 cloves garlic, pressed
- 1 medium onion, chopped
- 1/3 cup soy sauce
- 3 tsp sugar
- 1/2 tsp crushed red pepper flakes
- 2 inch ginger, grated
- salt, pepper to taste
Instructions
- In a small bowl, mix soy sauce and sugar until combined. Set aside.
- In a skillet, heat 1 Tbs of oil. Add chicken to the skillet and cook for around 2 minutes remove from the pan.

Very good, and is easy and quick to make. I used only 2 tsp sugar and found it a little too sweet though..maybe because I used less onion and no red pepper flakes?
