Cheeseburger Soup

Cheeseburger Soup is the ultimate comfort food made with vegan ground beef, celery, carrots, potatoes all dunked in a creamy and cheesy broth which comes together in one pot in under 30 minutes. A family favorite that just tastes like a cheeseburger and everyone won’t get enough of it, even pickiest eaters.

Why this is the most amazing Cheeseburger Soup

One pot meal: no long dish clean ups required. Everything is cooked in one pot and that my friends is what makes everything easier and also practical for busy weeknight meals.

Texture: potatoes and other vegetables like celery and carrots add an amazing crunch and texture.

Creamy: dairy free sour cream makes this Cheeseburger Soup pop and gives it an amazing richness.

First vegan ground beef and then potatoes, carrots and celery are fried in a sauce pan.

Seasonings: I add a lot of flavor to this soup which I think is important, because this is where the flavor profile really starts.

For a bit heat: I love to add a pinch of hot sauce.

What you need for this Cheeseburger Soup recipe

  • Potatoes
  • Vegan ground beef crumbles
  • Vegetable broth
  • Vegan sour cream, cheese and butter
  • Celery

 

  • Carrots
  • Garlic
  • Onions
  • Dried parsley
  • Hot sauce

How to make Cheeseburger Soup

In a casserole, melt dairy free butter and add vegan ground beef. Fry for 2 minutes, then remove the ground beef from the pot and try leaving as much of the butter in as possible.

Now add onion, garlic, celery, carrots, and potatoes and cook all for 3 minutes. Then give in the vegetable broth and sour cream.

Let this simmer until the potatoes are tender, roughly 10 minutes.

In the final step, the vegan ground beef is added back to the soup.

Finally stir in the cheese and when it is melted, add the vegan ground beef back to the soup, together with parsley, hot sauce and add a pinch of salt and pepper. Heat for around 2 minutes.

Serve the Cheeseburger Soup in bowls and enjoy.

Leftovers can be stored for around 4 days in the fridge. Technically you can freeze this soup for around 3 months. However I wouldn’t recommend it, because it might lead to separation from ingredients and a grainy texture.

Tips and tricks

Add more or less hot sauce as much as you like to your own preferences.

Freezing: As I said, I wouldn’t freeze it, but if you do always let it cool down completely. Use a container that is suitable for freezing. For reheating start slowly and increase the temperature from time to time until the soup is hot.

You see I added dried parsley in my step by step pictures which gives an amazing flavor, but you can also try chives.

  • 3 medium potatoes, cut into small cubes
  • 4 Tbsp dairy free butter
  • 10 oz vegan ground beef
  • 2 celery stalks, chopped
  • 1 carrot, chopped
  • 1 cup vegetable broth
  • 10 oz vegan cheese
  • 1/2 cup onions, diced
  • 3 cloves garlic, pressed
  • 14 oz vegan sour cream
  • 1 tsp dried parsley
  • 1/2 tsp hot sauce
  • salt, pepper to taste

Instructions
