These Cauliflower Bites are hearty, satisfying, crispy and made with simple ingredients like almond milk, vegan parmesan, Italian herbs, breadcrumbs and flour. These baked Cauliflower Bites are seriously so great and will be a family favorite in no time.

I tell you, cauliflower is one of my favorite vegetables.

At first hand it may seem a bit bland and tasteless, but when seasoned right, you can make the most iconic and delicious things like my Sweet and Sour Cauliflower, the Bang Bang CauliflowerCauliflower Wings, or my Cauliflower Gratin.

So easy to make: stick it in your oven, bake, and enjoy.

Flavor: garlic, onion powder, vegan parmesan and Italian herbs. These are great flavors that everyone will enjoy and eat.

Texture: I think cauliflower, breadcrumbs and flour make a pretty good texture with a nice crispiness and crunch.

What you need for this Cauliflower Bites recipe

  • Cauliflower florets
  • Almond milk
  • Panko bread crumbs
  • Flour
  • Vegan mayo

 

  • Garlic powder
  • Onion powder
  • Italian herbs
  • Vegan parmesan

In a large bowl, breadcrumbs, vegan Parmesan, and spices are combined.

How to make Cauliflower Bites

Preheat your oven to 425°F and prepare a baking sheet with parchment paper. You can also use a big casserole just make sure to use enough space for all that cauliflower.

Make the sauce:

Combine plant milk with vegan mayo, half of the vegan parmesan, season with a pinch salt and pepper.

Now for the marinade:

In a bowl, combine prepared sauce with flour, and season with a pinch salt and pepper. It should have a consistency of whisked egg. If the marinade is too thick, mix in a little more milk.

In another bowl combine breadcrumbs with Italian herbs, remaining parmesan, garlic powder and onion powder .

For the Cauliflower Bites

Dip florets into the marinade and make sure that it really sticks to the cauliflower florets and that they are completely covered.

Toss in the breadcrumbs from all sides, transfer to the prepared baking sheet and bake them for around 20 minutes.

Don’t think about leftovers, these are best hot and fresh.

Cauliflower florets are coated in the breadcrumb mix.

Serving suggestions

I like to serve these straight from the oven as it is, or with Ranch Dressing, a Ranch Dip, Spaghetti Sauce, or Arrabbiata Sauce.

Air fryer Cauliflower Bites

Prepare everything as in the recipe instructions above, except for the baking of course.

Now use your air fryer basket and coat it with oil or non stick spray.

Add all cauliflower and distribute them properly in a single layer. Finally cook for around 15 minutes at 350°F.

  • 1 lb cauliflower, cut into small florets
  • 1 cup flour (use gf, if needed)
  • 4 Tbsp vegan mayo
  • 2 cups panko breadcrumbs (use gf, if preferred)
  • 2 tsp garlic powder
  • 2 cups almond or oat milk
  • 1 tsp onion powder
  • 1 heaping cup vegan parmesan
  • 1 tsp Italian herbs
  • salt, pepper to taste
