What makes this recipe so easy is how few ingredients you actually need to make it. And the one that you do need are basic household staples that you most likely have on hand all the time.

You will of course need some pasta, basics like vegan butter and olive oil, a medium sized onion, garlic, and of course some (plant-based) chicken filets.

A tasty Cajun seasoning has to be on the list as well, together with vegan cream cheese, parmesan cheese and a non-dairy heavy cream. That’s all!

My strong recommendation is to pay attention to the salt content of such a seasoning. If it contains a significant amount of salt, be very careful with adding more salt later in this recipe.

However, you can also make your own homemade Cajun seasoning by combining spices like paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and black pepper for a personalized flavor.

What type of pasta works best for Cajun Chicken Alfredo Pasta?

Fettuccine is the traditional and most commonly used pasta for Alfredo sauce. The smooth and silky texture of fettuccine complements the velvety Alfredo sauce nicely.

However, you can also use other pasta shapes if you prefer or don’t have fettuccine on hand. Linguine, pappardelle, or even spaghetti can work well with Alfredo sauce. Ultimately, I go with penne pasta as the choice of pasta for this recipe.

Whatever you decide, just remember that the sauce should coat and cling to the pasta, so shapes with nooks and crannies may not be the best choice for a creamy homemade Alfredo sauce.

How to make Cajun Chicken Alfredo Pasta

First, prepare the pasta by cooking it al dente in a large pot with boiling salted water.

In the meantime, sear chicken: on a plate, rub the chicken with oil and then with 1 tbsp Cajun seasoning. Heat a large skillet with the remaining 1 tbsp olive oil. Cook for 3 minutes on each side. Remove from the pan and set aside.

Make the basic Alfredo sauce: In the same pan add 1 tbsp unsalted butter, then give the finely diced onions and garlic to it. Cook everything for 3 minutes on medium-high heat. Next add heavy cream, cream cheese, and parmesan, together with the remaining Cajun seasoning and a pinch of salt and pepper.

Drain the pasta and mix it with the sauce. Slice the seared chicken in strips and serve it with pasta. If you like, garnish with fresh parsley.
