Cajun Seasoning
Cajun Seasoning is a wonderful spice mix from garlic, onion, paprika, salt, pepper, oregano. You can, as I do, keep it really simple and use a seasoning mix from the store. Therefore there is to need to mix up some seasonings or spices together.
Whenever you want flavor, Cajun seasoning is my go to, because it adds a punch of flavor.

What you need for this Cajun Chicken recipe
Chicken filets and I use plant based. As always use whatever you like.
Cajun seasoning for a wonderful arsenal of flavors.
Vegetable oil to cook the chicken, yet make it delicious and texture wise wonderful.
Garlic and onions are there for another layer of classic flavors.
Hot sauce: this is really here to really amp up all Cajun flavors and give them a prominent signature. It really intensifies flavors and compliments the final result.
Non dairy heavy cream: base for our creamy sauce: silky, rich and amazing.
How to make Cajun Chicken
Sear Chicken
Into a bowl combine 2 Tbs of the Cajun seasoning and toss your chicken in the seasoning until it is well coated.
Add 1 tsp of oil to rub your filets. This step really helps the spice rub to stick. For an amazing flavor, season with a pinch salt and pepper from both sides.
In a pan, heat up 1 tsp of the remaining oil and cook chicken for around 3 minutes from each side, then remove from pan.
Make a creamy sauce
Do not remove any fat from the pan, because this is where the flavor is.
Now, add onions and garlic to the pan and cook them for around 2 minutes. Mix in heavy cream, remaining Cajun seasoning, hot sauce and a pinch of salt and pepper.
Put in chicken back and cook all for 3 minutes more.
Serve chicken filets with a generous amount of sauce, enjoy.
Leftover and storing directions
Leftovers are delicious for around 3 days.
You can reheat them slowly up in a pan or microwave.
