Bruschetta

Bruschetta is an Italian appetizer made with fresh tomatoes, lots of garlic and olive oil. Toasted bread is where it all starts and a little bit of balsamic vinegar makes everything better. Flavor in each and every bite.

I can vouch and tell I could really eat bruschetta any day. For me it can be an appetizer, lunch or dinner, because it taste always amazing. Who wouldn’t love that? 

What I do love about this recipe is it tastes so fresh, easily comes together fast and is so delicious.

It really taste great with Arrabbiata Sauce or Puttanesca Sauce. You can serve these sauces with pasta or just use them as dipping sauces for bruschetta, so good.

Bruschetta Bread

There are a lot breads that can be used for Bruschetta, but in my gusto I find baguette or ciabatta best.

These two breads have a great texture that really can hold the garlic and olive oil without getting mushy.

Of course it also really toasts nicely in the oven.

What you need for this Bruschetta recipe

Bruschetta is a very, very simple dish that relies on its flavor. So whenever you can, use high quality ingredients to reach best results.

Ripe juicy tomatoes are most delicious. You can use Roma or plum tomatoes. Everything is great as long it is tasty and delicious. I chop them and remove the inner flesh to make the taste more intense.

Extra virgin olive oil is most delicious like I use it in my Focaccia bread. It has a bold intense and super delicious flavor that is so good. The combination with Balsamic vinegar adds a wonderful flavor to our Bruschetta mixture that gives a great contrast to the other ingredients.

I use fresh garlic and basil to let everything really shine.

How to make Bruschetta

Preheat oven to 410F and set a 9×13 inch baking dish, but you can also prepare a baking sheet with parchment paper.

Prepare topping: In a bowl combine vinegar, garlic, basil, tomatoes, 2 Tbs olive oil and a pinch of salt and pepper. Set aside.

This is a great time to let the flavors develop. It is a marinating time while next you toast the bread.

Slice your bread into 1/4 inch thick slices and brush them with the 4 Tbs remaining olive oil from both sides.

Transfer slices to the baking dish and toast bread for around 10 minutes. After toasting remove from the oven add to a plate and add tomatoes on top, enjoy.

Tips and tricks

This is indeed a recipe that you should enjoy fresh with no leftovers. Here is what you can do instead: You can make the tomatoes in advance for around 2 days and let me tell you the flavor will be even bolder. Just toast your bread as you can see in my step by step pictures add tomatoes on top. That is really everything what is left to do.

Keep in mind to prepare tomatoes first, because as it sits the flavors of the Bruschetta will become so much more delicious.

As you can see, I remove the inner flesh from my tomatoes which makes them so delicious. But you can absolutely let the flesh let in and just chop them up. Know that the result will be less intense.

Ingredients

  • 1 lb tomatoes, chopped and inner flesh removed
  • 4 cloves garlic, pressed
  • 1 Tbs Balsamic vinegar
  • 1 Baguette sliced
  • 6 Tbs olive oil, divided
  • 1/3 cup basil, chopped
  • salt, pepper to taste

Instructions

  1. Preheat oven to 410F, prepare a 9x13 inch baking dish or baking sheet with parchment paper. Ingredients needed for making Bruschetta are collected on a board.

  5. Remove from the oven and add tomato mixture on top.

Notes

  • This is a recipe that is not meant for leftovers. Here is what you can do instead: You can make the tomatoes in advance for around 2 days.
    Whenever you are ready, toast your bread.
  • You can see I remove the inner flesh from my tomatoes which makes them so delicious. You can absolutely let the tomato flesh in and just chop them up. The result will be less intense.
