Do I need to cook the broccoli for this Broccoli Salad?
I know many recipes use raw broccoli. I’m personally not a big fan of it and prefer the broccoli to be steamed or cooked, at least blanched.
You can absolutely use it as it is, but I steamed the broccoli before making the salad.
Why this is the best Broccoli Salad
The textures: broccoli, sun flowers seeds and almonds make a pretty good texture and of course add flavor.
The sweetness: cranberries are amazing in many things and this salad is no exception.
Red onion: these onions add a great flavor and color.

What’s in this Salad Dressing
For me the dressing is always the best about any salad.
I tell you a often make more dressing than I need, because I love to spoon the extra dressing.
For this one you need vegan mayo, vinegar, garlic, and mustard.
How to make Broccoli Salad
To make the dressing, combine vegan mayo with mustard, vinegar, garlic in a bowl. Add a pinch of salt plus pepper.
Heat olive oil in a pan. Add the vegan bacon stripes and fry them crispy for 4 minutes. Set aside.
For the salad: combine broccoli, cranberries, sunflower seeds, almonds, onions, vegan bacon, cheddar and a pinch salt and pepper. Mix with the prepared dressing until everything is combined.
Tips and tricks
As I mentioned before I’m not a raw broccoli fan, so I steamed it before for 8 minutes in the microwave. But you can absolutely just blanche it for 2 minutes.
Instead of cranberries you can use dried apricots or raisins, if you like.
For a Keto Broccoli Salad leave out the cranberries, enjoy.

Ingredients
- 1.5 lbs broccoli florets
- 7 oz vegan bacon
- 1 Tbsp olive oil
- 1/2 cup sunflower seeds
- 1/2 cup almonds, flaked
- 3/4 cup cranberries
- 5 oz vegan cheddar, cubed
- 1/3 cup red onions, chopped
- salt, pepper to taste
For the dressing:
- 1 cup vegan mayo
- 3 Tbsp white vinegar
- 1 clove garlic, pressed
- 2 tsp mustard
- salt, pepper to taste
Instructions
