Barbacoa

Barbacoa made with vegan beef, cooked with great seasonings. Flavor in each and every bite. Great plain with rice, potatoes or even pasta and of course in tortillas with fresh salsa, yum. Also great in salads, yes.

If you look at other Barbacoa recipes you will notice it is prepared in a slowcooker for at least 8 hours.

I keep it really simple and make it in the skillet. Not authentic or traditional, I know, but still so delicious like you eat in an amazing restaurant.

What you need for this Barbacoa Recipe

Vegan beef: I bought mine shredded so I skip this step. If yours is not, you can shred it up with 2 forks. If you do beef you can use this of course. Use beef chucks or anything that you want.

I use Chipotle peppers from the jar, because there is amazing liquid in it. This makes a great sauce that is absolutely delicious and give everything a great heat.

Lime juice gives a wonderful lime flavor and apple cider gives a great tang. Both provide an amazing acidity.

As seasonings I use cumin, fresh garlic and onions.

Oil: olive oil or canola oil are great. Depends on your wishes for a more complex flavor with olive oil or neutral flavor or canola oil.

How to make Barbacoa

Into a skillet add olive oil, onions, garlic and cook them for 2 minutes.

Add beef, chipotle peppers, cumin, lime juice, apple cider and a pinch salt of pepper. Cook everything for 10 minutes on medium heat.

Serve plain or on tortillas.

Tricks and tips

Leftover are good for 4 days.

Quick idea: chop up some tomatoes, cilantro, onions, add a pinch salt and pepper. Place on a tortilla with barbacoa.

Ingredients

  • 12 oz vegan beef
  • 1 Tbs Oil
  • 3 cloves garlic, pressed
  • 1/2 cups onions, diced
  • 1 tsp cumin
  • 2 Tbs Chipotle peppers
  • 1 lime, juiced
  • 2 Tbs apple cider vinegar
  • salt, pepper to taste

For serving:

  • small tortillas
  • salsa
  • cilantro

Instructions

  1. In a skillet, heat oil.Ingredients needed for making Barbacoa are assembled on a wooden board.
