Spring is my time for recipes full of fresh vegetables. I love the smell, the colors, and the flavors of food that comes directly from the garden to the table.
Asparagus is one of the vegetables that for me is one of the epitomes of spring. Recently I have already made this Creamy Asparagus Orzo with Garlic Parmesan for you. One of these easy to enjoy family meals which is ready in 15 minutes. Just think about how perfect that is for easy and quick weeknight dinners.
This Asparagus Stir Fry will not disappoint you. It too is ready in under 15 minutes, fresh, flavorful, filling, hearty, made with my easy stir fry sauce, and simply made in one pan.
What’s in this best stir fry sauce
One of the key ingredients to this recipe is my easy stir fry sauce. It is one of the staples in my home and comes together so easily.
All you need for it is:
- rice vinegar
- tamari
- garlic
- cornstarch
- sweet chili sauce
What you need for this asparagus stir fry recipe:
- asparagus
- sesame oil
- mushrooms
- smoked tofu
- garlic
- stir fry sauce
Of course you can use any store bought stir fry sauce. But the taste might be differ as you use my recipe. So keep in mind if you do this, use more seasoning or adjust with other seasoning to taste.
How to stir fry asparagus
First of all, heat a skillet with sesame oil. Add garlic and fry for 2 minutes on medium heat. After that add tofu cubes, asparagus, mushrooms, and stir fry sauce. Fry for another 10 minutes. Serve on plates or bowls and enjoy.
It makes such a fantastic dinner, lunch, meal prep for everyone. High in taste, minimum effort. Everything is ready in under 15 minutes made in one pan.
I find it is delicious on its own but you can serve this also over rice, quinoa and I could imagine it is even yummy over spaghetti or soba noodles.
Variations and how to store asparagus
Asparagus mushroom stir fry: simply leave out the tofu.
Stir fry spinach: add 1 up to 2 hands of spinach to the base recipe for more variety.
Thai stir fry: simply serve this with my Thai Peanut Sauce with Basil for extra taste and creaminess.

Asparagus will stay fresh in the fridge for around 3 days. When cooked even for around 5 days. So you can make your make ahead meals.

- 8 oz smoked tofu, cut into cubes

- 4 oz mushrooms, sliced
