Asparagus Pasta

This Asparagus Pasta comes together in under 15 minutes and is easy to prepare with simple ingredients. A keeper so satisfying, that the whole family will enjoy, even pickiest hubbies or kids. No one can tell it is vegan.

I have to admit I wasn’t a big fan of asparagus until I made this Asparagus Quiche or my Asparagus Stir Fry.

Somehow, before that, I thought of asparagus as something bland, nothing that I would be interested in.

But whenever I make an asparagus recipe now,  you can count on amazing food with a lot of flavor, great texture. Something that you come back to again, so let’s enjoy together.

What you need for this Asparagus Pasta Recipe

  • pasta
  • soy cuisine
  • vegan chicken

 

  • asparagus
  • olive oil
  • garlic powder
  • onion powder

How to make Asparagus Pasta

First, bring salted water to a boil in a large pot and cook your pasta according the directions.

While the pasta is cooking, heat olive oil in a pan. When hot, add the vegan chicken strips, season them with salt and pepper and fry for around 3 minutes until slightly browned.  

Now add asparagus tip and fry everything for 3 minutes longer. Add soy cuisine, garlic and onion powder and season with another pinch of salt and pepper. Let simmer on medium heat for an extra 5 minutes.

Final step of mixing cooked pasta in the sauce pan.

When the pasta is ready, drain it and mix with asparagus sauce in the sauce pan.

Serve on bowls or plates.

Leftovers can be stored covered for around 4 days in the fridge.

Tips to get the best results any time

Use herbs: parsley, chives, basil that add variety to this dish.

Add other vegetables: carrots, peas, spinach are an amazing addition.

Meal prep: it will last for around 4 days and reheats beautifully. You can make it ahead or make a bigger batch.

  • 8 oz pasta (use gf, if needed)
  • 1 Tbsp olive oil
  • 7 oz green asparagus tips
  • 8 oz soy cuisine
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 6 oz vegan chicken cubes
  • salt, pepper to taste
