Ingredients

  • 2 cups rice, uncooked
  • 1 tablespoons vegetable oil
  • 1 medium bell pepper, chopped
  • 1 medium onion, peeled, chopped
  • 4 cloves garlic, pressed
  • 2 teaspoon safrran
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth
  • 10 oz vegan chicken
  • 1/2 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chili flakes
  • 3 tablespoons egg free mayo
  • 5 oz dairy free cheddar, shredded `
  • salt, pepper to taste

Instructions

  1. To prepare the rice, combine in a large pot the vegtable broth, tomato paste, saffran, cumin, paprika, oregano and chili flakes. Bring to a boil.
  2. When the broth is boiling, add the rice. Reduce to medium heat, then cook the rice for about 10 minutes. Keep stirring all the time to avoid that the rice sticks to the pot.
  3. Mix the vegan mayo with with cooked rice, set aside.
  4. Now, to make the chicken mixture, heat vegetable oil in a pan. When hot, give the choppen onions and bell pepper to the oil and fry both for 3-4 minutes. Then add the vegan chicken, season with garlic, salt and pepper. Fry for another 5-6 minutes until slighly browned.
  5. To layer the Arroz Imperial in a casserole dish, start with a layer of half of the rice mixture , followed by half of the chicken mix, and half of the vegan cheddar. Repeat with the rest.
  6. Preheat the oven to 380F, and bake the Arroz Imperial for 20 minutes.
