My Thai Green Curry Detox Cauliflower Rice made with just 6 ingredients and 2 easy steps is the smartest way to enjoy a healthy and delicious plant based meal in the new year.

Ingredients

  • 1 cauliflower, cut into florets
  • 3 Tbs Tamari
  • 8 cloves garlic
  • 1 cup pineapple, cut into chunks
  • 1 small bunch scallions
  • 2 Tbs Thai green curry paste
  • salt, pepper to taste
  • 1/2 cup peanuts for garnish (optional)

Instructions

  1. Just pulse the cauliflower florets into rice using a blender or food processor.
  2. Heat a skillet (you can do it with a bit of oil or vegetable broth for oil free cooking), add the cauliflower and fry. Add garlic, tamari, Thai green curry paste, scallions and pineapple. Season with salt and pepper, and garnish with some peanuts (optional).

This looks so good Florian! You know I'm a curry fanatic and I love that you always use a ton of garlic...so good! Would you believe I've never tried cauliflower rice yet? I am not a big fan of cauliflower in itself, but I imagine that it broken up into rice and with all these curry flavors, I would really love it! Great idea to add the pineapple. This dish does look so bright in your pics and sounds so flavorful!

I can totally relate to this Brandi! I've never a big fan of cauliflower rice before, because often it was so bland and doesn't have any flavor. What I've learned if done right it's really delicious and versatile. Maybe this recipe can convince you to try it!
