It’s a dish to impress and this turns a big smile on everyone’s face.

How to make Sweet Potato Casserole

Start by first making the mashed sweet potatoes. Peel and cut the sweet potatoes, then boiled them in lightly salted water until soft. Transfer to a bowl and mash them combined with the coconut milk and a punch of salt and pepper. 

Hop over to a blender or food processor to make the homemade almond sauce. Simply give the almonds, lemon juice and water to the bowl of the device and process until smooth.

To make the candied pecans just combine pecans, maple syrup, and cinnamon, and whisk together. Finally assembling is an easy game as always: start with 1/2 of the sweet potato mixture, spread almond sauce, apple slices and optional raisins.

Add the rest of the sweet potato mixture and finish with candied pecans. Bake for 15 minutes at 400°F, done.

Ingredients

  • For the sweet potatoes
  • 3 sweet potatoes
  • 1/2 cup coconut milk
  • salt, pepper to taste
  • 1 apple sliced, mixed with 1 Tbs Maple + 1 tsp cinnamon
  • 1/4 cup raisins (optional)

For the almond sauce

  • 1.5 cup almonds
  • 2 tsp lemon juice
  • 3/4 cup water

For the candied pecans

  • 1 cup pecans
  • 2 tbs maple syrup
  • 2 tsp cinnamon

Instructions

This looks soooo perfect for Thanksgiving Florian! I love sweet potatoes and eat them quite often. Adding the candied pecans on top is just perfection and really adds to the dimension of flavor. I've never seen apples in a sweet potato casserole...that is so cool. I bet this is borderline dessert with all these yummy additions! YUM!
