What you need for this Bruschetta Chicken recipe
Chicken Filets: I use plant based and these replace our toast or bread which are typically used for Bruschetta.
Tomatoes: You can use any tomatoes that you like, but I find Roma tomatoes best. Leftover garden tomatoes are also great as well.
Garlic, olive oil, balsamic and onions are amazing ingredients which add a ton of flavor.
Basil and oregano: these add a another layer of flavor, so good.
How to make Bruschetta Chicken
Begin with seasoning the chicken with garlic, oregano, and a pinch salt and pepper. Heat up olive oil in your pan and add chicken. Then cook it for around 4 minutes each side.
Make Bruschetta topping
In a bowl combine tomatoes, remaining garlic, olive oil, balsamic, basil, onions and season with a pinch of salt and pepper.
Finally, to assemble the Bruschetta Chicken, use 1 Tbs of the topping and cover a chicken filet with it. Leftovers of Bruschetta topping can be easily used other days for breads, chicken or mushrooms.
Tips and tricks
Keep in mind the time for cooking up chicken filets will be depend on the size and thickness. My plant based chicken was great at around 4 minutes each side, but for you this can be different.
To save time you can make the topping the night before so the flavors will be even more prominent and bold.
If you like a little punch of heat, you can add hot sauce or crushed pepper to the topping.

Ingredients
- 14 oz Vegan chicken (4 filets)
- 3 Tbs olive oil, divided
- 2 medium tomatoes, diced
- 4 cloves garlic, divided
- 1/3 cup onions, diced
- 1 Tbs Balsamic vinegar
- 1 tsp oregano
- 1/4 cup basil
- salt, pepper to taste
Instructions
- Season your chicken with garlic, oregano, a pinch salt and pepper.
- Heat olive oil in a pan and add chicken cook them for around 4 minutes each side.
- Prepare Bruschetta topping:
In a bowl combine tomatoes, remaining garlic, olive oil, balsamic, basil, onions and season with a pinch of salt, pepper. - Assemble Bruschetta Chicken:
Add about 1 tbs topping on top of one chicken filet. Serve and enjoy.
