What you need for this Cajun Chicken Pasta recipe
Penne pasta: any other pasta will work. You can even use leftover pasta or cook it just while you make the sauce.
Garlic and onions: you can chop your onion finely or roughly, just how you prefer it.
Olive oil and dairy free butter: olive oil for a bold and savory flavor and butter for a rich and buttery flavor. Both of them together take everything over the top, because you know after tasting it is truly a winner.
Cajun seasoning: you can use more or less as in my recipe given and written. Use more for a more intense and spicy flavor. Less Cajun seasoning for a milder flavor.
Vegan chicken: I use chicken pieces, but filets will work as well.
Sauce: non dairy heavy cream, cream cheese and parmesan makes a excellent sauce that is rich, cheesy and unbelievable creamy.
As vegetables I use a mixture from red and green bell peppers which only not adds great texture.
How to make Cajun Chicken Pasta
Start with preparing pasta according to the package directions or use leftover pasta.
To make the sauce, get a pan and heat up butter and olive oil. Then add onions, chicken, garlic, bell peppers and cook everything for around 3 minutes.
Next, mix in the Cajun seasoning, cream cheese, heavy cream and parmesan. Let everything simmer for 5 minutes. Finally add a pinch salt and pepper.
At this point your pasta should be done. Drain it, and finally mix it into the sauce. Serve in bowls or on plates and enjoy.
Tips and tricks
Leftovers of Cajun Chicken Pasta will be great for around 4 days. You can reheat leftovers on the stove or microwave.
For freezing: Let all cool completely and add into freezer bags. Also make individual portions for smaller quantities. Frozen this pasta will last greatly for around 4 months.

Ingredients
- 8 oz Penne pasta
- 3 cloves garlic, pressed
- 1/2 cup onions, chopped
- 10 oz vegan chicken, chopped
- 2 Tbs olive oil
- 2 Tbs non-dairy butter
- 2 tsp Cajun seasoning
- 5 oz dairy free cream cheese
- 3/4 cup non dairy heavy cream
- 1/3 cup vegan parmesan
- 1/2 red bell pepper, chopped
- 1/2 green bell pepper, chopped
- salt, pepper to taste
Instructions
- Prepare pasta according to the package directions or use leftover pasta.
- To a pan: heat up butter and olive oil. Add onions, chicken, garlic, bell peppers and cook everything for around 3 minutes.
- Next mix in the Cajun seasoning, cream cheese, heavy cream and parmesan. Let simmer for 5 minutes more. Add a pinch salt and pepper.
- Add pasta to the sauce and mix everything together. Serve and enjoy.
Notes
- Any pasta will work great, but penne is one of my favorites so I use it here.
- Adjust the spice level to your own taste and preferences. Use more or less Cajun seasoning.
- For a more decadent flavor sprinkle some parmesan on top and don't just leave it to the sauce. It is also great for serving, yum.
- Leftovers: store them for around 4 days in the fridge. Reheat on the stove or microwave.
- To freeze: cool complete this will be great in freezer containers or bags for 4 months.
