What you need for this Cauliflower Bake recipe
Before you go ahead and start cooking, let me just tell you what ingredients you need to have on hand and what you can do with them for the best results.
Basic ingredients
The star player here is of course cauliflower. My recommendation is to cut a head into florets and cook them before to soften them a bit. Alternatively you can steam them or roast them in the oven.
I also mix in bacon bites which are first cooked in butter to give them a little bit of a crunch.
Ingredients for the cheesy sauce
Vegan sour cream, cream cheese and cheddar are all mixed together to make the base of the creamy and comforting sauce for this Cauliflower Bake.
As a liquid I went with oat milk but you can use any milk that you like. However I find oat milk best because its taste is so similar to real whole milk.
Onion and garlic powder as seasoning add flavor that takes almost any dish to top notch level. In my gusto the more garlic the better it tastes.
How to make Cauliflower Bake
Getting ready
Wash and clean your cauliflower head, then cut it into florets. As in the recommendations, I add the florets into a steamer basket and use my microwave for around 7 minutes. Feel free to cook or bake them instead.
Start by preheating your oven to 425F. You will also need a 10×10 inch casserole dish.
Next heat dairy free butter in a pan and add bacon bites. Cook them for around 4 minutes until they get slightly browned, then remove from the pan.
Making the sauce
In the same skillet or pan, mix 3/4 of the cheddar with sour cream, oat milk, parmesan, and cream cheese. Use medium to low heat to melt everything while stirring constantly.
When all ingredients have mixed into a sauce, season with garlic and onion powder as well as salt and pepper to taste. Mix in the bacon bites, but reserve 1/4 for garnishing the Cauliflower Bake later.
Time for the oven
Transfer cauliflower to your casserole dish and give all of the sauce over it. Sprinkle with remaining bacon bites and cheddar on top.
Bake for around 15 minutes, then serve on plates.
Tips and tricks
You can keep leftovers of the Cauliflower Bake in the fridge for around 3 days.
For freezing I recommend to let it first cool completely before you and transfer it to a freezer container or wrap the casserole dish tightly with foil. Will stay fresh for around 2 months in the freezer.
Potatoes or broccoli are also amazing instead of cauliflower.

Ingredients
- 1 large cauliflower head, cut into florets
- 2 Tbs dairy free butter
- 6 oz vegan bacon bites
- 5 oz vegan cheddar shreds
- 7 oz dairy free sour cream
- 8 oz vegan cream cheese
- 1/2 cup vegan parmesan
- 1/2 cup oat milk
- 2 tsp garlic powder
- 1 tsp onion powder
- salt, pepper to taste
Instructions
Preparations
- Preheat your oven to 425F.
- Cut the cauliflower into florets and pre-ccok them (either steam, cook or bake).
- In a skillet, melt butter over medium heat. Add bacon bites and cook them for around 4 minutes, then remove them.
Making the sauce
- Into the same skillet, add cream cheese, sour cream, plant milk, parmesan, and 3/4 of the cheddar. Over medium heat keep stirring until all ingredients combine to a sauce.
- Add 3/4 of the bacon bites, and season with the garlic and onion powder, plus salt and pepper to taste.
Finishing the casserole
- Give the cauliflower florets to the casserole dish and mix with the sauce. Top with reserved bacon bites and cheddar on top. Bake for 15 minutes.
