Broccoli is one of my favorite vegetables, because what’s not to love?
Its texture and its taste are always appealing so you always count me in to an amazing casserole like my Broccoli Rice Casserole or my delicious Broccoli Casserole.
What makes this Broccoli bake so good
I tell you it is the crunchy potato chips, because they add a lot of flavor more than a breadcrumb topping which is delicious as well.
Chili flakes give a little bit of heat which in my gusto is needed, otherwise this Broccoli recipe can be a bit bland.
The creaminess and richness which is achieved with cream cheese – one of my favorite ingredients in the entire universe like in my Creamy Mac and Cheese.
I steamed my broccoli lightly before making the Broccoli Bake which is great for the texture. No one likes raw broccoli, friends.
What you need for this Broccoli Bake recipe
- Broccoli
- Vegan butter
- Chili flakes
- Oat milk
- Flour
- Vegan parmesan, cream cheese, cheddar
- Garlic
- Onions
- Potato chips
How to make Broccoli Bake
Preheat oven to 400°F and set a 8×11 inch casserole ready.
First of all, steam the broccoli florets. I use a steamer basket in my microwave and steam florets for around 8 minutes until they soften a bit, but have enough texture and crunch. Alternatively you can cook them on the stove or use a steamer attachment which you can use on your casserole or pot.
To make the onions: heat 3 Tbsp of butter in a pan. Fry the sliced onion rings for around 10 minutes until they are golden brown. Set them aside.
Make the sauce: In a saucepan, melt dairy free butter, then whisk in the flour, cream cheese, oat milk, garlic, parmesan, chili flakes, and season with a pinch salt and pepper. Stir until the sauce thickens up and is creamy.
Assembling: Mix broccoli with sauce, onions, and 3/4 of the chips in a large mixing bowl. Transfer to the casserole dish, add potato chips on top and sprinkle with cheddar.
Bake for 20 minutes then serve the Broccoli Bake hot from the oven.
Freezing and leftover instructions
You can freeze this Broccoli casserole for around 1 month. Be sure to let it cool completely and then store it properly in containers or bags to avoid freezer burn.
Always thaw completely for reheating. You can leave it for a longer period than one month in the freezer, but I find the flavors are getting a bit less then.
Leftovers can also be stored in the fridge for around 4 days and reheat great in the oven or microwave.
Tips and tricks:
You can switch potato chips for panko bread crumbs, but I find chips more tasty and delicious.
If you would like to add some herbs, dill or parsley can be great choices here.

Love this recipe, so good! It results in a lot of sauce so I do four times the amount of broccoli and twice the amount of onion. I also skip the step of frying the onion, it gives it a nice crunch. Plus you save some time, dishes and calories.
