What you need for this Pea Salad recipe:
- Peas
- Vegan bacon
- Olive oil
- Vegan cheddar
- Green onions
- Ranch dressing, prepared
How to make Pea Salad
First, defrost the peas. Really make sure you thaw them completely. You can also cook or steam them, if you like. Mine were done in 3 minutes. Canned peas will work too, but I find frozen ones more delicious.
In a pan heat olive oil, add vegan bacon strips and fry them for around 3 minutes. Set aside.
In a large bowl combine peas with green onions, vegan cheddar, and the fried vegan bacon. Season with a good pinch of salt and pepper. Mix with the ranch dressing. Serve in bowls or on plates.
Leftovers
My Pea Salad can be stored in the fridge for around 3 days.
Make sure to place it in an airtight container.
You can easily make a double batch and keep it in the fridge. A perfect idea for meal prep.
Can I freeze this?
Nope, I definitely do not recommend this.
First the peas have already been frozen, and refreezing them is going to make them loose texture.
Also the ranch dressing will be get watery, and the whole salad soggy. Something that does not taste good.

- 5 oz vegan bacon
- 1 Tbsp olive oil
- 5 oz vegan cheddar, cut into cubes
- 1 bunch scallions, finely chopped
- 1/2 cup ranch dressing, prepared
- salt, pepper to taste
