When it comes to easy recipes, I have found new love for rice. Especially leftover rice, since I tend to have it sitting in my fridge.

What you need for this Dirty Rice recipe

Before you head to the kitchen, here is the list of ingredients you need to have on hand:

  • leftover rice
  • vegan sausage
  • vegan ground beef
  • vegan bacon
  • vegan butter

 

  • garlic
  • Cajun seasoning
  • smoked paprika
  • green bell pepper
  • celery
  • onions

Vegan sausage bits, vegan ground meat, and bacon strips are added next to the pan.

How to make Dirty Rice

Melt vegan butter in a large casserole or skillet. Add onions, green bell pepper, celery, and garlic. Fry for about 2-3 minutes until the vegetable begin to soften.

Now it is time to add the vegan ground beef, diced sausage, and bacon. Fry for 2 minutes more on high heat. Season with Cajun seasoning and smoked paprika before you finally the cooked rice.

Season with a touch of salt and pepper and cook for 5 minutes further until everything is hot.

Serve on plates or in bowls, enjoy.

This makes such a fantastic meal for dinner, lunch, meal prep which you want to eat all week long, so good.

Can I freeze this?

I do not recommend freezing this because the bell pepper and celery will loose a lot of flavor and texture.

What should I do instead?

Store it in the refrigerator in an container with a lid on top for around 6 days. Please make sure to use an airtight container, otherwise freshness cannot be guaranteed.

Ingredients

  • 2,5 cups leftover rice
  • 4 cloves garlic
  • 2 Tbs Vegan butter
  • 2 stalks celery, diced
  • 1 green bell pepper, diced
  • 1/2 cup onions, diced
  • 2 tsp smoked paprika
  • 1 Tbs Cajun seasoning
  • 5 oz vegan ground beef
  • 2 vegan sausages
  • 1 cup vegan bacon
  • salt, pepper to taste

Instructions

  1. Melt vegan butter in a large casserole or skillet. Add onions, green bell pepper, celery, and garlic. Fry for about 2-3 minutes until the vegetable begin to soften.
